Silva is a buttery sheep's cheese, a product quite characteristic in mountainous areas, near Serra da Estrela mountains, were are located most of the herds and the producers of this type of cheese. Silva is produced with raw sheep’s milk, salt and thistle rennet to obtain a pure cheese texture, with taste smooth, herbaceous and lightly acidulous The minimum period of the cured process is 40 days and weight between 0,5Kg and 1Kg. The cheese can easily be scooped out of with chucks of bread.
