Graciosa Cheese is made in Graciosa Island, the second smallest of the nine island of Azores Arquipelago. It has a soft landscape full of green pastures and vineyards. Almost sweet and marvellously semi-hard cheese is made from 100% raw cow’s milk and animal rennet, aged for minimum period of 9 months. The yellowish paste has a crunchy texture and irregular holes and cracks. The strong aroma and flavor of Graciosa Cheese compliments many others and the smooth texture makes it fabulous for melting, becoming full when aged.
