Urze is the aged version of Silva, obtained by prolonged maturation of a minimum period of 60 days. Raw sheep’s milk cheese with coagulation of thistle rennet, it’s a ripened, semi-hard, with little or no eyes. Before packing they are painted with an emulsion of olive oil and sweet red pepper, an ancient insecticide.
