The Picante Beira Baixa DOP is the result of a coagulation of sheep and goat’s raw milk and animal rennet. This semi-hard cheese, is slightly grayish color, closed texture and brittle, without eyes or with small irregular holes and without crust. It has a weight between the 0.4 kg and 1 kg. Picante means spicy, after about 15-20 seconds, a searing mix of black peppercorn and charcoal leaves your mouth with an immensely dry, salty aftertaste and a pungent aroma. This unique bouquet has its origin in his particular 90 days curing process, covered with salt in a straw bed. Picante Beira Baixa DOP is presented to the consumer wrapped in aluminium foil.
